I just swapped out my break disks from 7" to 7.5". I fitted new cv joints to acomadate the larger wider discs however when I went to fit the new callipers I realized the discs weren't seated fully. Any help getting to the bottom of this would be greatly appreciated.

If the disc are not 'seated' I would first check that the drive flange is correct. This flange has to seat into the rotor that intern seats onto the CV joint and locates the entire assembly into the hub.
